Giant banana cupcake

Banana cake - One of the cakes that I bake more often at home, but I have baked chocolate banana cakes more frequently than plain ones.  This time since there was no cocoa powder at home I made these plain ones.

You will need

All purpose flour - 3/4 cup
Baking soda - 1/4 tsp
Baking powder - 1/8 tsp
Salt - 1/4 tsp
Sugar - 1/2 cup
Vegetable oil/canola oil - 1/4 cup
Egg - 1
Vanilla - 1/2 tsp
Banana - 1

~ Sieve all the dry ingredients (flour, baking soda, baking powder and salt).
~ Beat together oil and egg in a bowl until blended. Add sugar. Beat well.
~ Add the dry ingredients, mashed banana and vanilla and fold until well blended.
~ Pour into the prepared cake tin and bake.



I used a pudding mould to make one big giant cupcake.

  4. Very authentic! I've seen some of the new giant molds that I'm a bit skeptical about. A pudding mold is a grand idea!

  5. This looks so yummy! I'm sure the chocolate version is delicious, too, but sometimes there's nothing quite like some good old banana cake or bread. ;)
